Herkunft:
"Martinollet" ist der kleine Bach, der sich zwischen Buschland, Weinbergen und Olivenbäumen windet. Hier befindet sich die "Domaine Martinolles" eingebettet in beeindruckender Landschaft, geprägt von mediterranem Klima mit ozeanischem Einfluss.
Zum Cremant:
Der Crémant de Limoux besteht aus 60% Chardonnay, 20% Chenin Blanc, 10% Pinot Noir und 10% Mauzac.
Von Haus aus bringt er Primärnoten von Ananas, gelbem Apfel und Birne mit. Nach der zweiten Gärung in der Flasche folgt ein 15-monatiges Feinhefelager, wodurch der Crémant ein cremiges Mundgefühl, sanfte Briochenoten sowie dezent nussige Aromen gewinnt. Im Mund spritzig, harmonisch und elegant.
Ausbau:
Der Crémant de Limoux erhielt die traditionelle Flaschengärung mit anschließendem Feinhefelager von 15 Monaten.
